Ingredients
1 lb (450g) chicken breasts
4 cups broccoli florets
1 cup uncooked long-grain or jasmine rice
1 cup (240ml) 2% milk
1/2 cup (120ml) heavy cream
1 cup Parmesan cheese
3 tablespoons unsalted butter
2 cloves garlic, minced
1 teaspoon Italian herbs
1 tablespoon olive oil (for steaming broccoli)
salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Melt 2 tablespoons of butter in a skillet and cook chicken with garlic for 5-6 minutes; season with salt, pepper, and Italian herbs
Steam broccoli in a basket over boiling water for 3-4 minutes; drizzle with olive oil and salt
In a saucepan, boil 1 1/2 cups milk 3 4 cups water with rice for 12-15 minutes
In a bowl, mix cooked rice with remaining milk, heavy cream, and melted Parmesan; blend until smooth
Butter a 9×13-inch casserole dish
Layer half the rice mixture at the bottom
Top with cooked chicken and steamed broccoli
Pour the remaining rice mixture over the top
Bake for 20-25 minutes until golden and bubbly
Let rest for 10 minutes before serving
Notes
Chicken thighs work well for increased juiciness
For a vegan version, substitute Parmesan with nutritional yeast, use coconut cream, and replace butter with oil or vegan alternative
Ensure the casserole dish is properly buttered to prevent sticking
