Ingredients
1 large head green cabbage (about 2 lbs)
3–4 medium carrots
1 small red onion
1 tsp celery seeds
1/2 cup mayonnaise
3 tbsp vinegar (distilled white or apple cider)
1 tbsp sugar
Instructions
Cut cabbage crosswise into quarters, core, and thinly slice into a large bowl
Grate carrots and dice onion; add to the bowl
In a separate bowl, mix mayonnaise, vinegar, sugar, and celery seeds until smooth
Toss dressing evenly into cabbage mixture
Cover and refrigerate for at least 1 hour before serving
Notes
Chill ingredients beforehand for maximum crispness
Use a food processor for uniform cuts but process in short bursts to avoid mush
