Description

A light and refreshing international cucumber salad featuring crisp cucumbers, tangy yogurt dressing, and aromatic herbs. Ideal for hot days, picnics, or as a halal/vegan-friendly side. Mix uniform slices with flavorful dressing for a hydrating, no-cook side.


Ingredients

2 large cucumbers (English or Persian), 1 small red onion (thinly sliced), 1/2 cup plain yogurt (or coconut yogurt for vegan), 1/4 cup chopped fresh herbs (dill or cilantro), 1 tsp ground cumin (optional)


Instructions

Cut cucumbers into 12 pieces each
Thinly slice red onion
Chop herbs and place in a separate bowl
Whisk yogurt, salt to taste, and optional cumin in a large bowl
Add herbs to the yogurt mixture and mix thoroughly
Chill dressing for 10 minutes
Add cucumber pieces and onions to the dressing
Pour dressing over the vegetables
Garnish with lemon wedges

Notes

Use a mandoline for uniform cucumber rounds
Soak onions in ice water for 5 minutes to reduce sharpness
