Description
This moist, fudgy American-style chocolate layer cake delivers deep cocoa flavor and tender crumb with a velvety chocolate glaze. The buttermilk and espresso powder enhance richness, while the glaze sets to a fudgy finish. Perfect for birthdays or decadent dessert occasions.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
1 cup cocoa powder, Dutch-process
2 cups buttermilk
2 large eggs
1/2 tsp salt
1 tsp espresso powder
1 1/2 cups granulated sugar
1/2 cup melted butter
2/3 cup semisweet chocolate chips
1/4 cup coconut oil
Instructions
Grease and flour a 9-inch springform pan, inverting to remove excess.
Whisk all-purpose flour, baking powder, Dutch-process cocoa powder, and salt until well combined.
In a separate bowl, whisk buttermilk, eggs, melted butter, and granulated sugar until fully incorporated.
Pour wet ingredients into dry ingredients and gently mix with a spatula by rotating the bowl about 10 times.
Transfer batter to prepared pan and bake at 350°F (175°C) for 40-45 minutes, rotating halfway through, until a toothpick inserted in the center comes out clean.
To make the glaze, melt semisweet chocolate chips with coconut oil in a heatproof bowl set over a saucepan of simmering water or in 30-second microwave intervals, stirring until glossy.
Let cake cool completely before spreading the glaze over the top and sides. Refrigerate uncovered for at least 1 hour before serving.
Notes
Use room temperature eggs for a smoother texture and better emulsion blend.
Test doneness with a clean toothpick inserted in the center.
Cool cake completely before glazing to prevent melting.
For richer flavor, add 1/4 cup dark chocolate chunks to the glaze.
Avoid overmixing the batter to prevent excess air bubbles and ensure even layers.
Wait at least 25 minutes before checking if the cake collapses.
Coconut oil helps the glaze firm properly; refrigeration for 30+ minutes is essential.
Substitute buttermilk with 2 cups coconut milk for a non-dairy version.
Ensure granulated sugar is used; other sweeteners may alter texture.
