Description
Tender Mediterranean-style chicken skewers marinated in yogurt and honey for juicy, restaurant-quality bites. The lemon-and-garlic marinade with oregano delivers bold flavor while keeping the meat moist and flavorful.
Ingredients
Skinless, boneless chicken thighs, 1.5 lbs
Plain whole milk yogurt, 1/2 cup
Honey, 2 tbsp
Olive oil, 3 tbsp
Lemon juice, 2 tbsp
Garlic, 3 cloves, minced
Oregano, 1 tbsp
Red pepper flakes, 1 tsp
Wooden skewers, soaked (4 servings x 6 skewers)
Mint leaves (optional, for garnish)
Sumac (optional, for serving)
Instructions
In a bowl, combine yogurt, honey, 2 tbsp olive oil, 1 tbsp lemon juice, garlic, oregano, and red pepper flakes to make the marinade
Cut chicken into 1-inch cubes and add to the marinade, mixing thoroughly
Cover and refrigerate for 3 hours or up to 12 hours for optimal tenderness
30 minutes before grilling, remove chicken from fridge to temper
Thread 3 chicken cubes onto each skewer, alternating with 1 optional mint leaf
Preheat grill to 400°F (200°C), oil the grates with paper towel dipped in 1 tbsp olive oil
Grill skewers 6-8 minutes per side until golden with visible grill marks
Transfer to a wire rack and let rest 5 minutes
Brush with remaining 1 tbsp olive oil and sprinkle with sumac before serving
Notes
Use aluminum foil drip pans on the grill to prevent flare-ups
Spritz skewers with vegetable oil during grilling for a glossy finish
Sumac adds bright citrusy flavor and color – substitute with lemon zest if unavailable
Adjust red pepper flakes to control heat level
