Description
A Southern/Texan baked casserole with tender chicken, sautéed onions, and a golden cheesy milk mixture topped with crispy breadcrumbs. Creamy, satisfying, and perfect for feeding a crowd.
Ingredients
2 lbs chicken breast, boneless skinless
4 tbsp butter (or ghee for dairy-free)
1 large onion, diced
8 oz grated Chef’s Cheddar (or nutritional yeast)
2 cups milk (or coconut milk)
Breadcrumb topping (optional: olive oil for drizzling)
Instructions
Preheat oven to 375°F
Dice onion and sauté in 2 tbsp butter until golden
Cook chicken in remaining 2 tbsp butter until browned
Crumble chicken into pan, add sautéed onions
Mix in milk and grated cheese, combine well
Transfer to baking dish, refrigerate 15 mins
Top with breadcrumbs and drizzle with oil (if using)
Bake 20-25 minutes until golden
Notes
Use day-old bread for crumbs for firmer texture
Rest cooked chicken 10 mins before mixing for better texture
Let casserole rest 10 mins post-bake for cleaner slices
For dairy-free: ghee + nutritional yeast + coconut milk
For vegetarian: replace chicken with portobello mushrooms
