Description

This peach crisp features thinly sliced, spiced peaches topped with a golden, toothsome oat crumble. Best served warm with vanilla ice cream for a comforting seasonal dessert.

Ingredients

6 large ripe peaches
5 tablespoons granulated sugar
1 tablespoon ground cinnamon
1 cup all-purpose flour
1 1/2 cups old-fashioned oats
1/2 cup salted butter, softened
Zest from 1 lemon

Instructions

Preheat oven to 375°F
Zest 1 lemon into 5 tablespoons sugar; mix to combine
Peel, halve, and slice peaches into 1/4-inch pieces
Toss sliced peaches with cinnamon and sugar-lemon mixture; let rest for 15 minutes
In another bowl, combine oats, all-purpose flour, and softened butter until crumbly
Press 1/3 of the crumble mixture into the base of a 9×13-inch baking dish
Spread the peaches and syrup evenly over the crumble base
Top with remaining crumble mixture and press lightly
Place the dish on a baking sheet for easy cleanup
Bake at 375°F until golden and bubbly, 45 minutes

Notes

Chill crumble topping in refrigerator before baking to maintain structure
Use old-fashioned oats for optimal texture
Swap granulated sugar with light brown sugar for deeper flavor
Ensure peaches are thoroughly peeled for a smooth fruit layer
Bake on the middle oven rack for even browning
For vegan option, substitute butter with Earth Balance
Add 1/4 tsp salt to flavor fruit mixture (not in original)
Yield is 8 servings as a single layer dish
