Description
This creamy and aromatic rice pudding is made with basmati rice, whole milk, sugar, and seasonal spices like cinnamon. A perfect warm dessert to impress your family or serve during the festive season.
Ingredients
1¼ cups basmati rice
4 cups whole milk (halal-certified)
¾ cup sugar
1 tsp vanilla extract or almond extract
Pinch of ground cinnamon
2 tbsp sugar for caramelization
Instructions
Toast the basmati rice in ghee or butter until golden and aromatic.
Pour in 2 cups of water and bring to a boil. Cook for 3 minutes, then add the milk mixture.
Reduce heat to low, stir frequently until the rice is tender and the liquid is absorbed.
Sprinkle 2 tablespoons of sugar on top, and broil until lightly golden.
Notes
Use day-old milk for a creamier texture.
Test doneness by squeezing a grain of rice between your fingers.
Stir constantly during the first 10 minutes of cooking to avoid lumps.
Serving warm with Date-Spiced Almond Halva or Citrus Fried Nushop is recommended.
Store leftovers in an airtight container in the fridge for up to 3 days.
