Description

A hearty American classic, these seasoned ground beef patties are topped with a rich mushroom gravy made with vegetable broth and soy sauce. Juicy, savory, and free of pork and alcohol, perfect for comforting family meals.

Ingredients

1.5 lbs (700g) ground beef, 85–90% lean
1/4 cup (60ml) unsweetened applesauce
1/2 cup (50g) breadcrumbs
1/4 cup (60ml) vegetable broth
8 oz (225g) criminimushrooms
1/4 cup (30g) all-purpose flour
1 tbsp olive oil
Salt and dried thyme
1 onion, finely chopped
2 cloves garlic, minced
1 tbsp soy sauce

Instructions

In a large bowl, combine ground beef, applesauce, breadcrumbs, vegetable broth, garlic, salt, and thyme. Mix until just combined.
Refrigerate 15 minutes. Shape into 6 equal, 1/2-inch-thick patties. Let sit 5 minutes.
Heat 1 tbsp olive oil in a cast-iron skillet. Sear 4 patties until golden (5 minutes). Repeat with remaining patties.
Use same pan fat to sauté mushrooms and onions until tender. Stir in flour, then gradually add 1.5 cups vegetable broth. Add soy sauce, thyme, and simmer 5 minutes to thicken.
Return patties to skillet. Pour gravy over each. Cook 5–7 minutes until fully heated. Garnish with fresh thyme.

Notes

Cold meat prevents overcompacting
Cast-iron skillet ensures even browning
Thyme enhances umami; swap with oregano
Chilled mixture improves patty shape
Use vegetable broth for non-alcoholic authenticity
