Description
Crispy, caramelized beef patties made with high-heat skillet pressing. A quick, beginner-friendly method for juicy, evenly cooked burgers with a perfect crust using 80% lean ground beef and simple seasonings.
Ingredients
Ground beef, 1 lb (80% lean for best browning)
Sea salt, 1 tsp (coarse for crust formation)
Smoked paprika, 1 tsp (or chili powder)
Black pepper, ½ tsp (freshly ground)
Unsalted butter, 1 tbsp (for richness, omit for keto)
Instructions
Form 4 equal 3-ounce patties 1/8 inch thick. Use wet hands to prevent sticking. Chill patties 15 minutes for structural integrity.
Heat cast-iron skillet over medium-high (400°F) until shimmering. Add butter and swirl to coat.
Place patties spaced evenly in the skillet. Press with a burger press for 30 seconds. Cook 1 minute per side for medium-rare. Remove the press after the first flip.
Press a small indentation in the center of each patty (prevents bulging). Cook 30 seconds more. Use tongs to flip once. Let it rest 2 minutes.
