A meatless, alcohol-free comfort dish with crispy tater tots, creamy cheese sauce, and tender veggies baked to golden perfection. Perfect for vegetarian and halal-friendly meals.
Ingredients
4 cups frozen tater tots (use gluten-free if needed. Sub: hash brown patties cut thin)
2 cups shredded cheddar cheese (For dairy-free option: mozzarella pearls. Sub: vegan cheese blend)
1 cup sliced mushrooms (Use portabella or oyster mushrooms. Sub: substitute frozen mixed vegetables)
1 cup frozen peas and carrots (Thaw completely before use. Sub: fresh diced zucchini)
1 tsp garlic powder (Adjust based on taste preference. Sub: use minced fresh garlic (1 tbsp))
2 tbsp butter
2 tbsp flour
1 cup vegetable broth
1/2 cup heavy cream
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Spread tater tots in a single layer on a foil-lined baking tray
Bake for 20 minutes until golden and crispy
Set aside while preparing other components
In a saucepan, cook 2 tbsp butter until foam subsides
Whisk in 2 tbsp flour for 1 minute
Gradually add 1 cup vegetable broth while stirring constantly
Stir in 2 cups cheddar cheese and 1/2 cup heavy cream
Season with salt, pepper, and 1 tsp garlic powder
In a 9×13-inch greased baking dish, layer tater tots
Spoon cheese sauce over tots, spreading evenly
Top with half the mushrooms and half the vegetables
Repeat layers, finishing with vegetable topping
Cover the dish halfway with foil to prevent over-browning
Bake for 25 minutes at 400°F until golden
Notes
Use gluten-free tater tots if needed. Substitute hash brown patties cut thin for tots.
For dairy-free, use vegan cheese blend.
Substitute frozen mixed vegetables for mushrooms or fresh zucchini for peas and carrots.
Bake halfway covered with foil to prevent over-browning.
