Description
A vibrant Mediterranean salad combining ripe tomatoes, aromatic herbs, and a zesty oil-vinegar dressing. Perfect as an appetizer or light summer side dish.
Ingredients
4 large ripe tomatoes (heirloom or cherry recommended)
2 tablespoons extra virgin olive oil
1 tablespoon white vinegar (or apple cider vinegar)
1 clove garlic (minced, or 1 small shallot)
1/4 cup fresh basil (or oregano)
1/2 teaspoon salt (use fleur de sel if desired)
Black pepper to taste
Instructions
Wash and slice tomatoes 1/2-inch thick
Place on paper towel-lined tray to dry for 10 minutes
In a bowl, mix olive oil, vinegar, garlic, salt, and black pepper
Layer dried tomato slices in a large bowl
Drizzle dressing over tomatoes and gently toss to coat
Chill uncovered in fridge for 15 minutes
Garnish with fresh basil before serving
Notes
Use room-temperature tomatoes for optimal flavor
Optional: Add sliced cucumber or thyme leaves
Balance acidity with a small pinch of sugar if needed
Best served within 2 hours of dressing addition
